Default hands free profile vs headset profile

I am new to bluetooth technology. I recently purchased a Chrysler car that has a "UConnect" system in it. UConnect is a voice-activated, hands-free system that allows you to dial your bluetooth cell phone using voice commands, etc and transmits the audio through the car's stereo system. I am looking for a new cellphone, so I want to buy one that works with this system. I have two questions:
1) The car's manual says, "The UConnect system can be used with any Hands Free Profile certified Bluetooth cellular phone. If your cellular phone has a different profile (i.e. headset profile), you will not be able to use any UConnect features." What does this mean? How do I know a phone's "profile"? Would a Motorola V70 work?
2) I saw a device in Radio Shack that claims to adapt any Motorola cell phone into a blue tooth phone. If I use that, would it be considered a "Hands Free profile"?
