Interconnecting between any Bluetooth?

I may be naive, but I am looking to Bluetooth to provide a way for me to
listen to my stereo or TV wirelessly through headphones. But I would also
like the headphones to have a mike so I can use it with my mobile phone. I
would then like to talk between those headphones and another set for a
person with hearing problems!
Am I being unrealistic?
I don't know much about Bluetooth yet, but I realise there are profiles
which maybe limit what devices can connect to others.

If there is a good online guide that I should be reading that would be
helpful/
